Lime Grilled Chicken

How cute is my son?! I love that he can grill. I've made this recipe with whole breasts and on skewers.  Hope you love it!


prep time: 10 minutes | cook time: 20 minutes | servings: 2

Ingredients
2 boneless chicken breasts Juice of 4 limes
2 tbsp extra virgin olive oil 2 tbsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp dried sage
salt and pepper to taste


Process
Create a marinade by combining all the above ingredients (except chicken) in a bowl and mixing well. Place chicken breasts in a shallow dish and pour marinade over the top and cover. Marinate in the refrigerator at least 3 hours but up to 48 hours.
Let the chicken come to room temperature. Remove chicken breasts to a plate and pour marinade into a sauce pan. Heat marinade on the stove and bring to a boil. Reduce heat to simmer for 10 minutes until it thickens.
Preheat grill on medium heat. Cook chicken breasts on the grill, about 10 minutes per side.
Baste the chicken with the marinade reduction while it grills. The chicken is done when it reaches an internal temperature of 165°F. Enjoy.
