Jalapeno Poppers

Don't ya just love The Pioneer Woman?! I bought her book recently and it is GORGEOUS!  She has a NEW book coming out very soon, too.


So, I thought I would make an appetizer for my hubby's birthday party. Enter Jalapeno Poppers. Don't worry, they are not spicy at ALL (even the kids ate them!)  When you clean them, you will scoop out all of the membranes and seeds which is what makes peppers hot.


The Ingredients:

18 Fresh Jalapenos
1 (8ounce) Cream Cheese
1/2 Cup grated cheddar cheese
1 Green onion, sliced
18 slices thin bacon, cut in halves (I used un-cured, nitrate free bacon.)
Bottled BBQ Sauce
Toothpicks
Rubber Gloves (for working with jalapenos) PLEASE wear gloves or you will be very unhappy if you don't.

Preheat the oven to 275*. Cut the jalapenos in half lengthwise. With a spoon scrape out all the seeds and the light-colored membranes. In a medium bowl combine the cream cheese, cheddar cheese and onion.  Next, stuff each pepper with the cheese mixture.  Wrap bacon slices around each half covering as much of the surface as possible. Brush the surface of the bacon with your favorite BBQ sauce.  Secure the jalapenos with a toothpick and bake for one hour or until the bacon is sizzling.

Serve hot or at room temperature. They won't last long!
